Important: These are plain tofu values. Smoked, marinated, or breaded tofu can have 5โ€“15 times more carbohydrate because of added sugar, cornstarch, or flour coatings. Always check the label for prepared tofu products.

Why Tofu Rarely Raises Blood Sugar

Common Mistakes to Avoid

  • Ignoring marinades and sauces. Teriyaki, hoisin, and BBQ sauces add 10โ€“20 g of sugar per serving. If you track tofu only, you will seriously underestimate the GL of the finished dish.
  • Weighing raw versus cooked tofu. Baking or pan-frying drives off water and concentrates carbs by weight. Decide which basis your nutrition label uses, and weigh accordingly โ€” preferably the same basis as the label.
